Sfoglina is an upscale pasta house from Fabio Trabocchi, and its name (pronounced sfoal-yee-nah) refers to Italian masters of pasta-making. Accordingly the menu focuses on traditional and regional Italian cuisine. Chef Erin Clarke helms the kitchen, which churns out popular dishes such as the house farro salad, a full mozzarella bar, and an array of small plates and pasta dishes, including Roman bucani noodles and squid ink linguini. The best way to experience the menu is probably to order the pasta tasting menu, which allows you to choose three pastas for the table to share, family style (if you’re looking for a gluten free meal, regulars suggest you try the beef short ribs instead).
There’s an impressive wine list, of course, and a selection of specialty cocktails to accompany your meal. Make sure to leave room for the cheese and dessert courses—the house tiramisu is a winner.
